Outside Istanbul, water buffalo herders cling to an old way of life

In Turkey and much of the Middle East, buffalo milk is used for yogurt, cheese and a thick, clotted cream known as kaymak. Many buffalo herds are raised in the verdant rural outskirts of Istanbul, which are increasingly under threat by urban sprawl and government projects.
