Move over rice. China says eat more potatoes.

Rice is a staple for China’s 1.4 billion people. But in 2015, with concerns over food security and available arable land, Beijing decided to promote the humble potato. Gemma Ware, the host of The Conversation podcast, spoke to Xiaobo Xue Romeiko, a professor at the State University of New York at Albany, about why China wants more people to eat spuds.
