Higher carbon dioxide concentrations make some staple crops less nutritious

Experiments show that some varieties of rice and wheat have lower protein and vitamin contents when grown under elevated carbon dioxide concentrations. Kristie Ebi, a professor in the Center for Health and the Global Environment at the University of Washington, explains this could cause more anemia, stunting and nutrient deficiencies in the future.
