For health and environmental reasons, the Consumer Product Safety Commission (CPSC) is considering restrictions on gas stoves. That leaves American home cooks very agitated. Gas stoves have been the key to controlling temperatures. Well, there is an alternative, induction, and it’s been the go-to cooktop for years across Europe and Asia. Marco Werman, a foodie himself, finds out more about the induction alternative from Paul Hope, who evaluates and writes about appliances (and is himself a skilled chef) for Consumer Reports.
