Now -- for today's Geo Quiz ...think jam and twist. Those are two techniques used in a competition that's going on right now on the west coast of Sweden. Specifically, in a town in Bohuslan province -- close to the Norwegian border. This is one of many old fishing villages clustered along the rocky coast of the North Sea. There are plenty of seafood restaurants in this town - serving up fresh lobster as well as oysters.... The town is hosting a competition tonight in fact it going on right now, so we're going to have move quickly here to the answer. Per Olaffssen joins us now on the line ... OystersOysters The answer to today's Geo Quiz is the town of Grebbestad in the northern part of the province of Bohuslän on the west coast of Sweden. It's where an oyster shucking contest is going on tonight. Anchor Marco Werman gets details about the local tradition from local oyster shucking champion Per Olofsson. Here are some oyster shucking tips (courtesy of Chow.com) Fold a clean kitchen towel to use as a protective mitt. Hold the oyster curved side down (that's upside down) so that when you open it, the deep shell will catch the oyster's liquor (juices). Place an oyster in your towelled hand and your towelled hand on a steady surface. Wedge your oyster knife into the hinge that connects the shells. (Don't use a regular knife; the blade is too thin.) Then turn the knife as you would a doorknob, exerting minimal forward pressure. As you turn the knife, there will be a slight, satisfying ?pop? as the joint gives way. Take out the knife and wipe it free of sediment. Slide it between the shells to cut away the muscle that holds the shells together. Remove the upper shell. Carefully run the knife under the meat to release it.
